Proper Knife Care and Maintenance.

In my work I have seen a lot of cringe worthy things. Especially when it comes to knife care, or lack there of. From putting your handmade Damascus steel knife in the dishwasher to your child playing "swords" with your cutlery after watching a kung-fu flick... Proper knife care and maintenance is a must to protect your investment. SO I have put together a list of ways to protect your investment!  

1. Keep your knife Sharp. There is nothing more dangerous in a kitchen than a dull knife. Regular knife sharpening will not only keep you safe, it makes your food taste better. I recommend having your knife sharpened at least once per year for average home use.

2. Do not put your knives in the dishwasher. This will actually damage your knife. It will dull the knife quicker, the high heat could damage the handle and warp the blade. Best practice is to hand wash your knife before and after use. Rinse and dry immediately. 

  3. Protect your edge by storing properly. If your set didn't come with a block, store in a drawer or install a magnet strip.

4. Regularly align your edge with a honing rod. I recommend using a ceramic at least once a week. This will keep your knife performing well throughout the year. 

5. To avoid damage, use the proper knife for the job. You wouldn't use a hammer to drive a screw in the wall, why are you using a filet knife to chop your carrots?
